Good news - looks like the California bill will exempt rice noodles from the provision.

http://www.mercurynews.com/breaking-news/ci_151...

Since rice noodles don't contain eggs like Italian pasta, can't the argument be made that not storing them in refrigerators makes no difference in the sanitary status of the noodles?

And Jee's post on kimchi and now noodles is making me seriously hungry! :p~~~~~

I love reading people's reactions, like "why can't they just change the recipe." because thousands of years of noodle-making means nothing when it comes to today's standards.

If anything, this has made me crave even more noodles.

The health officials are being ridiculous. But this shouldn't be about culture. It's about a food item, that makes up most of the menus in many restaurants, possibly getting ruined if they are forced to comply. Indirectly you could say it is about culture, but the argument (as stated in the linked article) that "this is our culture" isn't a good one. "This would ruin our livelihood" - THAT should be the argument here.
